Gluten Free BBQ Chicken Pizza
BBQ chicken pizza is my husband's favorite pizza and now my kids want to have it any time my husband gets it. My goal was to make one just as good as their favorite pizza place but free of all the junk that comes with take out pizza. This pizza was a success! Everyone enjoyed it, including my husband who has been eating BBQ chicken pizza from the same place for at least the last 10 years.
Ingredients per crust:
2 Chicken cutlets breaded in Gillians bread crumbs or grilled chicken cut into cubes
1/4 cup BBQ sauce (make sure it's clean and free of all artificial ingredients) I used OrganicVille
1/4 cup (or more if you want it more cheesy) Goat mozzarella shredded (You can use regular mozzarella if you eat cow's milk, just make sure it's organic)
Gluten free Crust (We've made this on Udi's GF Crust shown above and Kinnikinnick GF Crust)
Directions:
Place cubed chicken in a bowl and toss with BBQ sauce. Spread chicken on crust and top with cheese. Drizzle a little more BBQ sauce on top of cheese and bake in a 350 degree oven for 10-12 minutes until crust is golden and cheese is bubbly.
