Creamy Mac and Cheese two ways



Forget using boxed mac and cheese especially the ones with the powered cheese packet. These 2 mac and cheese dishes will satisfy anyone who loves a good mac and cheese without sacrificing your health. The first one is a typical mac and cheese, the kind I had as a kid out of the box and the second is a little healthier adding broccoli to get in an extra veggie. Both are delicious, I hope you enjoy.

Ingredients:
1 box gluten free pasta I used these elbows for the first dish and these shells for the second dish
1/4 cup grass fed butter
1/4 cup brown rice flour
1/2 teaspoon salt
1/4 teaspoon black pepper
2 cups unsweetened plain almond milk
2 cups shredded goat cheddar

Directions:
Cook macaroni according to package directions. In medium saucepan, melt butter over medium heat.



Stir in the flour, salt and pepper.



Stir in the milk. Cook for 5 minutes then stir in the cheese and cook until melted. Drain macaroni, add to cheese sauce and stir until all is coated.



Broccoli Version:
Steam or boil broccoli until fork goes through easily but not mushy. Transfer to a bowl. When pasta is done add the broccoli along with the pasta to the cheese sauce and stir to combine.
