Turkey Chili (gluten, dairy, corn, soy and refined sugar free)
Ingredients
1/4 cup olive oil
2 cups chopped onion
1 cup chopped red pepper
4 garlic cloves, chopped fine
1 pound lean turkey meat
2 (35 oz) cans crushed tomatoes
2 Tbsp tomato paste
2 cup chicken stock
1 Tbsp dried hot red pepper flakes
1 teaspoon dried oregano
2 Tbsp chili powder
Salt and pepper
2 (15 oz) cans red kidney beans, drained and rinsed
Directions
Heat the oil in large pot or Dutch oven over moderate heat. Add the onion, bell pepper and garlic, cover and cook, stirring occasionally until the vegetables are soft, about 10 minutes. Add the ground turkey, breaking up the meat with a spoon, until the meat is no longer pink. Stir in the tomatoes, tomato paste, stock, pepper flakes, oregano, chili powder, salt and pepper. Simmer, partially covered, stirring occasionally, for 30 minutes. Stir in the beans and cook, partially covered, 20 minutes longer.
