Raw Cookie Dough Bites (gluten, dairy, corn, soy and refined sugar free)


I’ve been starting to eat more raw foods these days. Raw foods are more nutrient dense. When foods are cooked, some of the enzymes, vitamins and minerals are destroyed. I started making more raw desserts for my kids too. These cookie dough bites were a big hit with the kids. They are also really good mixed into some raw ice cream for a raw cookie dough ice cream treat! This recipe was derived from this recipe from The Earth Diet.

Ingredients
2/3 cups cashews
1/3 cup oats (if your gluten free make sure they are gluten free oats)
2 tablespoons honey
1 tsp vanilla
Handful of mini chocolate chips or cacao nibs

Directions

In a blender (I use a Vitamix) blend the cashews and oats until you have a flour mixture. Add the honey and vanilla and mix until a dough forms. Spoon mixture into a bowl and add the chocolate chips and stir. Roll into balls. This made about 14 cookie dough bites. You can make them smaller if your adding them to ice cream. Then you’ll get about 28. If eating as is, put them in the refrigerator for about an hour and enjoy! If you can’t wait, they are also good as is but I prefer them cold
