Dairy Free Pesto (gluten, dairy, corn, soy and refined sugar free)
Pesto is one of my favorite pasta sauces. After going gluten free, I was very happy to be still enjoy pesto on my gluten free pasta. Now that I’m cutting down on dairy, I went to make pesto and thought….how will it work without the parmesan??? Pesto without parmesan wouldn’t taste the same, but I had to figure something out. I started by just removing the parmesan and seeing what happened. To my surprise, it wasn’t too different at all. After a few adjustments on the amount of salt and olive oil, I came out with a completely satisfying parmesan free pesto!! I hope you enjoy!
Ingredients
2 cups loosely packed basil leaves
1/2 cup pine nuts
3 cloves garlic
1/4 cup olive oil
sea salt to taste
Directions
Combine all ingredients in a food processor and process until smooth. Serve on your favorite pasta or use as a spread on crackers.

I braided this in to my whole wheat roll recipe last night and it was absolutely delicious! Do you think it would make for a good sauce for grilled chicken or something like that if I just added a little bit of almond milk to the recipe?
